Smashed Potatoes with Kale

Join the Veggie Kids Club with this delicious and nutritious version of mashed potatoes. Children can help wash veggies, strip and prepare kale, and even flex their muscles by mashing the finished dish. This recipe is CACFP creditable as a mixed vegetable or 2 vegetables.

INGREDIENTS:

  • 1 tablespoon vegetable oil 6 cups diced potatoes (1/4 inch squares)

  • 6 cups diced kale (1 inch pieces)

  • 3 tablespoons chopped scallions

  • 1/4 teaspoon crushed red pepper flakes

  • 1 cup water salt & pepper to taste

DIRECTIONS:

1. Heat oil in a large frying pan over medium heat.

2. Add potatoes and cook for 5 minutes.

3. Add kale and cook for 5 more minutes.

4. Add 1 cup water, cover and cook for 5 more minutes.

5. Mash potatoes and kale with a fork until smooth. 6. Add scallions, red pepper flakes, and salt & pepper to taste.

IT’S BETTER TOGETHER!

With this recipe, let children:

  • Wash kale leaves in a large bowl of water

  • Strip the kale leaves from the stem

  • Rip kale leaves into 1-inch pieces

  • Tenderize kale leaves by bending & squeezing

  • Mash cooled potato and kale

INGREDIENTES:

  • 1 cucharada de aceite vegetal

  • 6 tazas de papas cortadas en cubitos (cuadrados de 1/4 de pulgada)

  • 6 tazas de col rizada cortada en cubitos (piezas de 1 pulgada)

  • 3 cucharadas de cebollines picados

  • 1/4 cucharadita de hojuelas de pimiento rojo triturado

  • 1 taza de agua sal y pimienta al gusto

DIRECCIONES:

1. Caliente el aceite en una sartén grande a fuego medio.

2. Agregue las papas y cocine por 5 minutos.

3. Agregue la col rizada y cocine por 5 minutos más.

4. Agrega 1 taza de agua, tapa y cocina por 5 minutos más.

5. Majar las papas y la col rizada con un tenedor hasta que quede suave.

6. Agregue las cebollines, las hojuelas de pimiento rojo y sal y pimienta al gusto.

¡ES MEJOR JUNTOS!

Con esta receta, deje que los niños:

  • Laven las hojas de col rizada en un recipiente grande con agua.

  • Rompan con la mano las hojas de col rizada en trozos de 1 pulgada

  • Ablanden las hojas de col rizada doblándolas y apretándolas

  • Machaquen de patata enfriado y col rizada

  • Pelen las hojas de col rizada del tallo
